Instructions
Combine flour, baking powder, cinnamon, and sugar in a large bowl. Set aside.
In a different bowl, mix the soy milk, applesauce, vanilla.
Add the soy milk mixture to the dry ingredients, stirring until it is just slightly mixed. Do not overmix as this will cause your waffles to be chewy.
Spray the preheated waffle iron liberally. Pour approximately 1/4 cup of batter onto a waffle iron. Cook until done.
