1yellow or orange bell peppersliced very thin (julienned)
2cupscollard greenschopped and packed
3tbsporange juicefresh squeezed, no added sugar or preservatives
zest of 1 orange
1tbspBalsamic vinegar
1/8tspsaltto taste
1/8tsp black pepperto taste
Instructions
In a steamer basket, add water to the bottom of the steam basket. Bring the water to a boil and add in the green beans. Steam for about 3 minutes until tender and bright green.
In a large skillet over medium heat, add 2 tbsp of water, saute the shallots, garlic, and peppers for about 5 minutes until tender and golden.
Reduce heat and add in the green beans, collard greens, juice, zest and vinegar. Cook for 5 minutes. Salt and pepper to taste.
