Ingredients
4cupspumpkinpeeled and cubed
1mediumsweet potatopeeled and cubed
2cupsyellow oniondiced

1/2cupred lentilsrinsed and drained
13.5ozcan of light coconut milk
4ozcan of green chiliesheat to taste (mild, medium or hot)
2clovesgarlicminced
2tbspfresh gingerpeeled and grated
2tbsptomato paste
1tbspground coriander
1tbspground turmeric
1tbspground cumin
1tspsaltto taste
1/2tspblack pepperto taste
Instructions
Place all the ingredients into the Instant Pot and stir well to combine flavors. Under PRESSURE COOK, set it for high and and set the timer for 4 minutes (remember it takes 10-15 minutes for pressure to build),
Once the timer goes off, use the Quick Release method (this takes about 5 minutes). Carefully open and remove the lid.
Stir up the soup and adjust seasoning to taste.
Notes
Serve with cooked brown rice, quinoa or cauliflower rice.
