Ingredients
  

  • 4 cups pumpkin peeled and cubed
  • 1 medium sweet potato peeled and cubed
  • 2 cups yellow onion diced
  • 2 cups water
  • 1/2 cup red lentils rinsed and drained
  • 13.5 oz can of light coconut milk
  • 4 oz can of green chilies heat to taste (mild, medium or hot)
  • 2 cloves garlic minced
  • 2 tbsp fresh ginger peeled and grated
  • 2 tbsp tomato paste
  • 1 tbsp ground coriander
  • 1 tbsp ground turmeric
  • 1 tbsp ground cumin
  • 1 tsp salt to taste
  • 1/2 tsp black pepper to taste

Instructions
 

  • Place all the ingredients into the Instant Pot and stir well to combine flavors. Under PRESSURE COOK, set it for high and and set the timer for 4 minutes (remember it takes 10-15 minutes for pressure to build),
  • Once the timer goes off, use the Quick Release method (this takes about 5 minutes). Carefully open and remove the lid.
  • Stir up the soup and adjust seasoning to taste.

Notes

Serve with cooked brown rice, quinoa or cauliflower rice.
