Instant Pot Lasagna Soup

Ingredients
Veggies
- 1 tbsp Earth Balance Butter
- 4 cloves garlic minced
- 1 cup onion diced
- 1/2 cup red bell pepper diced
- 1/2 cup zucchini diced
- 1/4 cup carrots diced
- 1/4 cup red lentils rinsed and drained
- 1 cup tomato puree
- 14.5 oz can of diced tomatoes
Seasonings
- 2 tsp Italian seasoning
- 1/4 tsp garlic powder
- 1/4 tsp onion powder
- 1/2 tsp salt
- 1/8 tsp black pepper to taste
Remaining ingredients
- 3 cups vegetable broth
- 5 oz lasagna noodles Brand: Pasta Joy broken into pieces
- 1 cup fresh spinach packed; roughly chopped
- 1/2 cup plant-based mozzarella cheese
Instructions
- On the front of the Instant Pot, select SAUTE. Add the butter and once melted, mix in the garlic and onions. Cook 3-5 minutes or until the onions are tender.
- Add in the remaining veggies and continue to saute for 1-2 minutes. Press CANCEL.
- Add the remaining ingredients except the cheese. Stir well and make sure nothing is sticking to the bottom (will trigger a burn error). Close and lock the lid. Set the venting to SEALING.
- Under PRESSURE COOK, select high and set the timer for 3 minutes. (Remember to allow 10-15 minutes for pressure to build.)
- Once the timer goes off, allow for a natural release. Once the pressure has released, carefully open and remove the lid.
- Fold the spinach into the soup.
- Place the mixture into 3 bowls and top with the mozzarella cheese.
