Ingredients
  

Burrito Filling

  • 3 tbsp Earth Balance Butter
  • 1 medium red onion chopped
  • 1 medium red bell pepper diced
  • 3 cloves garlic minced
  • 15 oz can of black beans drained and rinsed no preservatives
  • 1 1/2 cups brown rice short grain
  • 1 1/2 cups kale finely chopped
  • 12 oz medium style salsa
  • 2 cups water
  • 2 tsp chili powder
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • 1 1/2 tsp salt

Burrito Makings

  • 8 Healthy Whole Wheat Tortillas No preservatives
  • 3 cups romaine lettuce chopped
  • 1/2 cup plant-based sour cream No preservatives
  • 1 cup plant-based cheese shredded No preservatives
  • 1 large avocado
  • 1/4 cup cilantro chopped
  • 1 large tomato chopped
  • 1 stalk green onions chopped
  • 1 medium jalapeno sliced
  • 1/4 cup pico de gallo to taste

Instructions
 

  • Select the SAUTE function on the front of the Instant Pot. Heat the Earth Balance Butter and then saute the onions, bell pepper, and garlic for 2-3 minutes. Select CANCEL. Add a couple tablespoons of water to keep from sticking and to deglaze the pot.
  • Add the remaining ingredients for the Burring Filling. Mix everything together. Close and lock the lid. Under PRESSURE COOKING, select high and the timer to 25 minutes. Once cooked, allow to release naturally and stir ingredients.
  • Once the filling is done, it's time to make your burrito. Taking your Healthy Whole Wheat Tortilla, spoon some filling and then add desired Burrito Makings. Roll one side over, then fold up the bottom. Finish rolling up the burrito and serve.
