Ingredients
  

  • 2 cups long grain brown rice
  • 3 cups water
  • 1 tsp salt
  • 2 bay leaves
  • 1 cup cilantro leaves
  • 3 tbsp lime juice fresh squeezed; no added preservatives
  • 1 medium lime zested

Instructions
 

  • Rinse the rice until the water runs clear.
  • Add the rice, water, salt, and bay leaves to the Instant Pot and mix well, making sure nothing is sticking to the bottom (it can trigger a burn error).
  • Close and lock the lid. Under PRESSURE COOK, select high and set the timer for 4 minutes (remember it takes 10-15 minutes for the pressure to build).
  • Once the timer goes off, allow the pressure to release naturally (this takes about 10 minutes).
  • Carefully open and remove the lid. Remove the bay leaves. Fluff the rice with a fork.
  • Add the cilantro, lime juice and lime zest. Mix well and its ready to serve.
