Ingredients
  

  • 1 tbsp Earth Balance Butter
  • 1 medium yellow onion diced
  • 2 medium carrots chopped
  • 2 stalks celery
  • 1 large potato shredded
  • 2 cloves garlic minced
  • 1 tsp dried thyme
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 bay leaf
  • 1 tsp liquid smoke
  • 2 cups green split peas
  • 6 cups vegetable broth
  • 14.5 oz can of diced tomatoes
  • 1 tbsp lemon juice fresh squeezed; no added preservatives

Instructions
 

  • On the front of the Instant Pot, select SAUTE. Melt the butter and then add the onions, carrots, and celery. Saute for 4-5 minutes or until they begin to soften.
  • Add the potatoes, garlic, thyme, salt, black pepper, bay leaf, and liquid smoke. Saute for 1 more minute.
  • Add the split peas and broth. Mix well to combine flavors. Press CANCEL.
  • Close and lock the lid. Set the venting valve to SEALING and under PRESSURE COOK, select high and set the timer for 12 minutes (remember it may take 10-15 minutes for pressure to build).
  • Once the timer goes off, allow the pressure to release naturally (about 10 minutes). Carefully set the release valve to open to release remaining pressure, open and remove the lid.
  • Remove the bay leaf.
  • Mix in the diced tomatoes, and lemon juice. Taste and adjust seasoning if needed. Enjoy!
