Ingredients
  

  • 2 tbsp Earth Balance Butter
  • 1 medium onion chopped
  • 2 cloves garlic
  • 2 14.5 oz cans whole tomatoes No preservatives
  • 2 cups vegetable broth
  • 1 tbsp fresh basil chopped
  • 1/2 tsp Italian seasoning
  • 1 tsp salt
  • 1/2 tsp black pepper

Instructions
 

  • Select the SAUTE function on the Instant Pot. Heat the Earth Balance Butter and add the onions. Cook until onions are translucent and tender. Stir in the garlic and cook for 1 more minute. Press CANCEL on the Instant Pot.
  • Add the tomatoes, vegetable broth, basil, Italian seasoning, salt and pepper. Close and lock the lid. Under PRESSURE COOKING, select high and set timer for 20 minutes.
  • Release pressure naturally.
  • Pour ingredients into a blender or use an immersion blender. Blend until smooth and creamy. Serve.
