Instant Pot Plant based Sloppy Joes

Ingredients
- 1 tbsp Earth Balance butter
- 1 large onion diced
- 1 tsp salt
- 1 large red bell pepper chopped
- 1 tbsp ground cumin
- 1 tsp dried oregano
- 3 tbsp tomato paste
- 1 lb plant-based ground "beef" Brand: Gardien
- 1 cup brown lentils
- 1 cup red lentils
- 3 cups water
- 28 oz can of crushed tomatoes
- 2 tbsp Worcestershire sauce
- 2 tbsp apple cider vinegar
- 2 tbsp agave optional
- 8 whole wheat buns No Preservatives
Instructions
- On the front of the Instant Pot, select SAUTE. Melt the butter and then add the onions, salt, and bell pepper. Cook for 3 minutes.
- Add the cumin and oregano. Continue to cook for 1 minute.
- Mix in the tomato paste and stir well to keep from sticking to the bottom. Cook for 1 minute. Press CANCEL.
- Add the remaining ingredients except the buns to the Instant Pot. Mix well to combine flavors and to make sure bottom is not sticking.
- Under PRESSURE COOK, select high and set timer for 13 minutes.
- Once timer goes off, select natural release. It will take about 15 minutes for the pressure to release. Carefully open and remove the lid.
- Spoon mixture out onto the hamburger buns.
Notes
Substitute the bell pepper for a poblano pepper for a spicier burger!
